Duties may include but not limited to/Nhiệm vụ bao gồm nhưng không giới hạn:
• Track and review costs across various hotel departments, especially Food & Beverage (F&B) and operations.
• Monitor issues procedures from storerooms to ensure requisitions are presented properly signed, authorized and that the established procedures are followed for both food and beverage.
• Ensures administrative and operation cost figures are correctly recorded and relevant expenses accounted.
• Participate in market survey and make comparison of purchase prices with other hotels
• Develop and implement cost control policies and procedures
• To assist in playing a positive and creative role in working with the F&B Department and to constructively assist in pricing, testing and menu planning, as well as the actual control of the cost.
• To verify standard recipe cost detail prepared by Executive Chef.
• Supervises tallying of all items sold on the menu or drink lists of each F&B outlet.
• Carries out spot checks on portion control of all items dispensed in the kitchens.
• To establish and conduct inventory schedules of all store items. Standard inventory Sheets will be used.
• Safeguard all F&B inventories and provide management with timely and accurate operational cost figures.
• Perform reconciliation and variance analysis of inventory.
• Prepare Slow-moving items Report and Expired Items Report.
• Prepares Monthly Cost Controller report and get the endorsement from Food & Beverage Department.
• Performs other related duties as assigned by Assistant DOF or DOF.
