Assist in establishing control systems to minimize excessive costs by reducing waste and other losses while maintaining quality
Help identify potential issues in F&B operations early to prevent them from escalating
Collaborate positively with the F&B Department to assist in pricing, menu planning, and cost control
Ensure daily records for food issued to the kitchen from storerooms and perishable food delivered directly to the kitchen are maintained
Monitor slow-moving stock items in storage, recommend improvements to reduce waste, and investigate spoilage causes
Continuously audit food costs against potential costs by keeping recipe costing up-to-date; count and audit inventories for price and quantity accuracy
Work with the Executive Chef on butchering tests, portion control, and recipe development
Inspect store requisitions and transfers, manage inventory schedules, and assist in preparing equipment inventory and loss reports
Verify banquet billing accuracy, ensure F&B cashiers' work is free from irregularities, and check that all guest checks align with current menu pricing
Prepare cost evaluations and analyze major expense items as required by the Financial Controller or department heads
Perform related duties and special projects as assigned by the Director of Finance or Financial Controller

Able to deal effectively with guests in a resort environment
Maintain a well-groomed and professional appearance
Willingness to work flexible hours and assist in other positions as business demands dictate
English with ability to communicate clearly
Knowledge as well as abilities in other languages would be beneficial
